A quick and easy Marry Me Chicken recipe featuring tender chicken breasts in a rich sun-dried tomato cream sauce, perfect for weeknight dinners or impressing guests.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 2 large pieces)
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper to taste
  • 34 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes (oil-packed preferred)
  • 1 cup chicken broth (homemade or low-sodium store-bought)
  • ¾ cup heavy cream
  • ⅓ cup freshly grated Parmesan cheese
  • A handful of fresh basil leaves, chopped
  • A pinch of red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Pat chicken breasts dry with paper towels and season generously with salt and pepper on both sides. (5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken to a plate and cover loosely with foil to rest. (12 minutes)
  3. Reduce heat to medium. Add butter and minced garlic to the skillet. Stir for about 30 seconds until fragrant but not browned. (1 minute)
  4. Add chopped sun-dried tomatoes and chicken broth. Scrape up browned bits from the pan with a wooden spoon. Let simmer for 3-4 minutes to meld flavors and reduce slightly. (5 minutes)
  5. Transfer skillet contents to a blender or food processor and blend until smooth. Return sauce to the skillet. (5 minutes)
  6. Stir in heavy cream and Parmesan cheese. Let sauce simmer gently, stirring occasionally, until it thickens slightly, about 3-4 minutes. (5 minutes)
  7. Stir in chopped fresh basil and red pepper flakes if using. Season with additional salt and pepper to taste. (2 minutes)
  8. Return chicken breasts to the pan, spoon sauce over, and warm together for 2-3 minutes. (3 minutes)
  9. Plate chicken and spoon extra sauce on top. Garnish with basil leaves. (1 minute)

Notes

If sauce is too thick, add a splash of chicken broth to loosen. If too thin, simmer longer to thicken. Blend sauce carefully when hot to avoid splattering. Pat chicken dry for best sear. Rest chicken after cooking to keep juicy. Use medium-high heat carefully to avoid burning garlic or sauce.
