  • 4 ounces cream cheese, softened
  • 1/2 cup whole milk
  • 1 teaspoon chipotle powder or smoked paprika
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 cup diced tomatoes (fresh or canned, drained)
  • 1/3 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup fresh jalapeño slices (optional)
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it apart until no longer pink. Drain excess fat if necessary.
  2. Stir in taco seasoning and 1/4 cup water. Simmer for 3-4 minutes until beef is well-coated and liquid mostly evaporated. Set aside.
  3. In a medium saucepan over low heat, combine shredded cheddar, cream cheese, whole milk, chipotle powder, and minced garlic. Stir constantly with a whisk until smooth and creamy, about 5 minutes. Season with salt and pepper to taste.
  4. On a large platter or baking sheet, spread half the tortilla chips. Spoon half the seasoned beef evenly over chips, then drizzle half the queso dip on top. Repeat with remaining chips, beef, and queso.
  5. Sprinkle diced tomatoes, sliced black olives, chopped green onions, and jalapeño slices evenly over the nachos.
