These savory hot brown sliders combine tender turkey, a rich and creamy mornay sauce, and melted cheese on soft slider buns for a comforting and flavorful handheld meal perfect for gatherings or quick dinners.

Ingredients

Scale
  • 12 small brioche or soft dinner rolls
  • 1 pound thinly sliced cooked turkey breast
  • 1 cup shredded sharp white cheddar cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups whole milk, warmed
  • 1/2 cup shredded Gruyère cheese
  • 1/4 teaspoon ground nutmeg (optional)
  • Salt and white pepper, to taste
  • 6 slices crispy bacon, cooked and halved (optional)
  • 1 medium tomato, thinly sliced
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish or line with parchment paper.
  2. Melt butter in a medium saucepan over medium heat. Whisk in flour and cook for 1-2 minutes until pale golden and nutty-smelling to make a roux.
  3. Gradually whisk in warmed milk, stirring continuously to avoid lumps. Cook for 3-5 minutes until sauce thickens.
  4. Remove from heat and stir in shredded Gruyère cheese until melted and smooth. Season with nutmeg, salt, and white pepper. Set aside.
  5. Slice each slider bun horizontally, leaving a hinge. Layer bottom halves with turkey slices, tomato slice, and half a slice of bacon if using.
  6. Place buns in baking dish close together. Spoon mornay sauce generously over each slider and sprinkle shredded cheddar on top.
  7. Bake for 15-18 minutes until cheese is bubbly and golden. Broil for 1-2 minutes for a golden crust, watching carefully to avoid burning.
  8. Remove from oven, garnish with chopped parsley, and let rest for 3 minutes before serving.

Notes

Use warm milk to avoid lumps in the sauce. Slightly stale buns absorb sauce better without becoming soggy. Watch carefully during broiling to prevent burning. Sauce can be made ahead and reheated gently. For dairy-free or gluten-free versions, substitute milk, cheese, flour, and buns accordingly.
