Refreshing Watermelon Agua Fresca with Lime

A quick and easy summer drink combining sweet watermelon and zesty lime for a refreshing and hydrating beverage perfect for hot days.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed
  • Juice of 2 medium limes (about 3 tablespoons or 45ml)
  • 2 cups (475ml) cold water
  • 12 tablespoons (15-30g) granulated sugar, honey, or agave syrup (optional)
  • Ice cubes, as needed for serving

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into cubes, removing rind carefully.
  2. Squeeze juice from 2 medium limes to get roughly 3 tablespoons (45ml) of fresh lime juice, removing seeds.
  3. In a blender, combine watermelon cubes, fresh lime juice, cold water, and sweetener if using. Blend on high for 30-45 seconds until smooth but slightly textured.
  4. Optionally strain the mixture through a fine mesh strainer into a pitcher to remove pulp.
  5. Refrigerate the agua fresca for at least 30 minutes to chill and let flavors meld.
  6. Serve over ice cubes in tall glasses, garnished with lime wedges or fresh mint leaves if desired.

Notes

Use ripe watermelon that sounds hollow when tapped for best sweetness. Avoid over-blending to keep some texture and prevent heating the mixture. Fresh lime juice is essential for bright flavor. Adjust sweetness after tasting. Chill well for best taste. The recipe scales well for larger batches. For a sparkling version, substitute still water with sparkling water.
