  • 4 ripe peaches, peeled and chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey or simple syrup (optional)
  • 1 bottle (750 ml) prosecco, cava, or dry sparkling wine, chilled
  • Sliced strawberries
  • Blueberries
  • Raspberries
  • Thin lemon or lime wedges
  • Fresh mint leaves
  • Ice cubes or frozen fruit for chilling

Instructions

  1. Peel and chop 4 ripe peaches, removing the pits. Add to blender with 1 tablespoon fresh lemon juice and optional honey or simple syrup. Blend until mostly smooth but slightly pulpy, about 3-4 minutes.
  2. Transfer peach puree to a pitcher and chill in the refrigerator for at least 30 minutes.
  3. Prepare fresh fruit garnishes: slice strawberries, prepare blueberries and raspberries, cut thin lemon or lime wedges, and rinse and dry fresh mint leaves.
  4. Set up the mimosa bar by arranging the chilled peach puree pitcher, fruit bowls, mint, and sparkling wine on a table or counter. Place champagne flutes nearby with spoons and tongs for garnishes.
  5. Keep the sparkling wine chilled in an ice bucket or fridge until ready to serve (around 40°F/4°C).
  6. Pour about 2 ounces of peach puree into each glass. Gently top with 4 ounces of sparkling wine to preserve bubbles.
  7. Let guests personalize their drinks with fresh fruit and mint leaves.
  8. Serve immediately and consume within 30 minutes for best flavor and fizz.

Notes

Do not over-blend the peach puree; keep some pulp for texture. Keep all ingredients chilled to maintain bubbles and freshness. Pour sparkling wine gently to avoid foam overflow. Prepare puree a day ahead if desired and stir before serving. Use a champagne stopper to preserve opened sparkling wine.
