Instructions

  1. Cook the rice according to package instructions to yield about 2 cups cooked (15-20 minutes). If using leftover rice, bring to room temperature or lightly steam before assembling.
  2. While the rice cooks, finely grate the ginger, mince the garlic, and slice the scallions thinly, separating white and green parts (about 5 minutes).
  3. Heat 1 tablespoon vegetable oil in a non-stick skillet over medium-high heat. Add minced garlic and white parts of scallions; sauté for 1 minute until fragrant.
  4. Add ground turkey, crumble with a spatula, and cook 5-7 minutes until no longer pink and starting to brown, stirring occasionally.
  5. Stir in grated ginger, soy sauce, toasted sesame oil, and chili flakes if using. Cook for another 2 minutes to blend flavors, then remove from heat.
  6. In a separate small non-stick pan, heat 1 tablespoon vegetable oil over medium heat. Crack in eggs carefully and cook 2-3 minutes until whites are set but yolks remain runny. For firmer yolks, cover pan briefly or cook longer without overdoing it.
