Instructions

  1. In your mug or small bowl, combine 4 tablespoons (30 g) all-purpose flour, 2 tablespoons (25 g) granulated sugar, 1/4 teaspoon baking powder, and a pinch of salt if using. Stir with a spoon to blend evenly.
  2. Pour in 3 tablespoons (45 ml) milk, 1 tablespoon (15 ml) vegetable oil, and 1/4 teaspoon vanilla extract. Stir thoroughly until you get a smooth batter without lumps. It should be thick but pourable.
  3. Gently mix 2 tablespoons of rainbow sprinkles into the batter. Don’t overmix, or the colors might bleed.
  4. Place the mug in the microwave and cook on high for 70-90 seconds. Start checking at 70 seconds. The cake should rise and look set but still moist.
  5. To test doneness, insert a toothpick or fork in the center. It should come out clean or with a few moist crumbs, not wet batter.
