Ingredients

  • Bone-in fully cooked ham (8-10 pounds)
  • Honey (1/2 cup)
  • Brown sugar (1 cup, packed)

  • Dijon mustard (2 tablespoons)
  • Ground cinnamon (1 teaspoon)
  • Whole cloves (about 20, optional)
  • Orange zest (from one orange)
  • Butter (2 tablespoons, melted)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the ham from packaging and pat dry with paper towels. Using a sharp knife, score the surface in a diamond pattern about 1/8-inch deep.
  3. If using, insert cloves at the diamond intersections.
  4. Place the ham on a roasting rack in the pan, fat side up.
  5. In a small saucepan, combine pineapple juice, brown sugar, honey, Dijon mustard, ground cinnamon, orange zest, and melted butter. Bring to a simmer over medium heat, stirring until sugar dissolves and glaze thickens slightly, about 5-7 minutes.
  6. Baste the ham generously with the glaze. Reserve some glaze for later basting.
  7. Cover the ham loosely with aluminum foil.
  8. Bake for about 15-18 minutes per pound, approximately 2 to 3 hours for an 8-10 pound ham. Halfway through cooking, baste with remaining glaze and re-cover.
  9. In the last 30 minutes, remove the foil to let the glaze caramelize. Keep basting every 10 minutes until the surface is shiny and sticky.
  10. Check the internal temperature with a meat thermometer; it should read 140°F (60°C) for pre-cooked ham. If not, cook a little longer but watch the glaze to prevent burning.
  11. Let the ham rest for 15 minutes before slicing to allow juices to redistribute.

If glaze thickens too much while basting, warm it gently before applying. Let the ham rest uncovered for a few minutes after removing foil to allow the glaze to set and develop slight crispness. For a dairy-free version, replace butter with coconut oil. You can substitute brown sugar with coconut sugar or honey with maple syrup for flavor variations.
