  • 1 large egg, beaten
  • 1 cup (about 30g) fresh spinach, roughly chopped
  • ½ cup (75g) cherry tomatoes, halved
  • 2 tablespoons red onion, thinly sliced
  • 1 clove garlic, minced
  • A handful fresh basil, roughly chopped
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes or a sprinkle of mozzarella cheese

Instructions

  1. Preheat your oven to 425°F (220°C). Place a pizza stone or baking sheet inside to warm up for about 10 minutes.
  2. In a medium bowl, combine cottage cheese and beaten egg. Stir until smooth but still slightly textured. Season with salt and pepper.
  3. Rinse and roughly chop spinach, halve cherry tomatoes, thinly slice red onion, and mince garlic.
  4. Place flatbread on parchment paper. Spread the cottage cheese mixture evenly over the surface, leaving a small border around the edges.
  5. Scatter spinach evenly over the cheese layer, then distribute cherry tomatoes and red onion slices. Sprinkle minced garlic and fresh basil on top. Drizzle olive oil over everything.
  6. Using the parchment paper, transfer the flatbread onto the preheated stone or baking sheet.
  7. Bake for 12-15 minutes until edges are golden and crispy and topping is set.
  8. Optional: Sprinkle mozzarella or red pepper flakes during the last 3 minutes of baking for extra flavor.
  9. Remove from oven carefully, let cool for 1-2 minutes, slice, and serve warm.
