  • 3 ½ teaspoons (14g) baking powder
  • 1 teaspoon (6g) salt
  • 1 tablespoon (12g) granulated sugar
  • 1 ¼ cups (300ml) milk (whole or 2%)
  • 1 large egg, room temperature
  • 3 tablespoons (42g) unsalted butter, melted (plus extra for greasing)
  • ½ cup (120ml) pure maple syrup
  • 1 tablespoon (14g) unsalted butter (for drizzle)
  • Optional: pinch of cinnamon or vanilla extract
  • Optional toppings: fresh berries or sliced bananas, chopped nuts (pecans or walnuts), powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your 9×9 inch baking dish with butter to prevent sticking.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar until evenly combined.
  3. In a separate bowl, beat milk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently just until combined; batter should be thick but pourable.
  5. Pour batter into the baking dish and smooth the top. Optionally, sprinkle fresh berries or sliced bananas on top.
  6. Bake for 20-25 minutes until golden brown and a toothpick inserted in the center comes out clean. Tent with foil if edges brown too fast.
  7. While baking, warm maple syrup and butter in a small saucepan over medium-low heat until butter melts; add cinnamon or vanilla if desired and keep warm.
  8. Let casserole cool for 5 minutes after baking. Drizzle with warm maple syrup and add nuts or powdered sugar if desired before serving.

Notes

Do not overmix the batter; a few lumps are fine. Use room temperature eggs and milk for better rise. Tent casserole with foil if edges brown too quickly. Warm maple syrup gently to avoid sogginess. For extra fluffiness, separate the egg and fold in whipped egg whites.
