  • 2 ½ cups (315g) all-purpose flour
  • 1 tbsp baking powder
  • ¼ cup (50g) granulated sugar
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, cold and cubed
  • 1 tsp dried lavender buds
  • 2 Earl Grey tea bags
  • ¾ cup (180ml) heavy cream, cold
  • 1 large egg, beaten
  • 1 tsp lemon zest
  • 1 cup (120g) powdered sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Pour the cold heavy cream (¾ cup) into a small saucepan. Add the two Earl Grey tea bags and gently warm over low heat without boiling. Remove from heat once steaming and let steep for 10 minutes. Discard tea bags and chill the cream in the fridge until cold (about 15 minutes).
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together the flour, baking powder, granulated sugar, salt, and dried lavender buds.
  4. Add the cold, cubed unsalted butter to the dry mix. Using a pastry cutter or two knives, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.
  5. In a small bowl, whisk the chilled Earl Grey cream with the beaten egg until smooth.
  6. Pour the wet mixture into the dry ingredients. Gently mix with a fork or hands until just combined; the dough will be slightly sticky but should hold together. Avoid overmixing.
  7. Turn the dough onto a lightly floured surface and pat into a 7-inch (18cm) circle about 1 inch (2.5 cm) thick. Cut the circle into 8 equal wedges.
  8. Transfer the wedges to the prepared baking sheet, spacing about 2 inches (5cm) apart.
  9. Bake for 18-22 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  10. While the scones cool on a wire rack for 10 minutes, whisk together powdered sugar, lemon juice, and lemon zest to make the glaze. Adjust consistency as needed.
  11. Drizzle the lemon glaze generously over the warm scones and let it set slightly before serving.

Keep butter and cream cold for flaky scones. Do not overmix the dough to avoid toughness. Steep tea in cream to infuse flavor evenly. Use a sharp knife to cut scones to maintain rise. Bake immediately after shaping for best texture. Adjust glaze consistency with lemon juice or powdered sugar as needed.
