  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 1 can (15 oz/425g) kidney beans, drained and rinsed
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 1 can (28 oz/796g) crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 2 oz (56g) dark chocolate (70% cocoa or higher), finely chopped
  • 1 cup (240ml) beef broth
  • Optional finishings: chopped fresh cilantro, sour cream or Greek yogurt, shredded cheddar cheese, fresh lime wedges

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  2. Add the diced onion, bell pepper, and minced garlic to the pan. Cook until softened and fragrant, about 5 minutes.
  3. Transfer the cooked beef and veggies to your slow cooker. Add the drained kidney and black beans, crushed tomatoes, and beef broth.
  4. Sprinkle in chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Stir well to combine.
  5. Add the finely chopped dark chocolate to the slow cooker and stir to incorporate.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir gently halfway through cooking. If chili is too thick, add a splash more broth or water.
  7. Before serving, taste and adjust seasoning if needed. Add a pinch more salt or a squeeze of lime juice to brighten flavors. Add hot sauce for extra heat if desired.
  8. Serve hot with optional toppings like shredded cheddar, sour cream, cilantro, and lime wedges.
