Flavorful Grilled Peach and Arugula Salad

A quick and easy summer salad featuring smoky grilled peaches, peppery arugula, salty prosciutto, and creamy gorgonzola, perfect for light dinners or entertaining guests.

Ingredients

  • 34 ripe but firm peaches, halved and pitted
  • 4 cups fresh arugula, washed and dried
  • 68 thin slices prosciutto, torn into bite-sized pieces
  • 4 ounces gorgonzola cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon freshly squeezed lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: toasted pine nuts or walnuts for crunch

Instructions

  1. Preheat your grill or grill pan over medium-high heat for about 5 minutes until hot.
  2. Rinse and dry peaches, slice each in half and remove the pit. Brush cut sides lightly with olive oil.
  3. Place peaches cut side down on the hot grill. Cook for 3-4 minutes without moving to caramelize and get grill marks.
  4. Flip peaches and grill for another 2 minutes on the skin side to soften without mushiness.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, lemon juice, salt, and black pepper to make the dressing.
  6. Place arugula in a large bowl and drizzle about half the dressing over it. Toss gently to coat without overdressing.
  7. Arrange dressed arugula on a serving platter. Slice grilled peaches into wedges and scatter on top.
  8. Add torn prosciutto pieces and sprinkle crumbled gorgonzola evenly over the salad.
  9. If using, sprinkle toasted pine nuts or walnuts for added crunch and flavor.
  10. Drizzle remaining dressing lightly over the salad just before serving.

Notes

Use firm peaches for grilling to prevent them from falling apart. If peaches are very ripe, grill for less time to avoid mushiness. Tear prosciutto instead of cutting for better texture. Toss arugula with dressing just before serving to keep it crisp. Dressing should be light to avoid overpowering the salad. If no grill pan is available, roasting under a broiler or sautéing in a skillet are good alternatives.
