  • 1 cup boiling water (240 ml)
  • 1 cup cold water (240 ml)
  • ½ cup fresh or frozen blueberries (optional)
  • 1 box lemon Jello gelatin mix (3 oz)
  • 1 cup boiling water (240 ml)
  • ½ cup cold water (120 ml)
  • ¼ cup fresh lemon juice
  • ½ cup whipped topping or whipped cream
  • 1 cup heavy cream, chilled (or store-bought whipped topping)
  • 2 tablespoons powdered sugar (optional)
  • ½ teaspoon vanilla extract
  • Fresh blueberries and lemon zest for garnish (optional)

Instructions

  1. Prepare the Blueberry Jello Layer: Dissolve blueberry Jello mix in 1 cup boiling water, stir until dissolved. Add 1 cup cold water and stir. Fold in blueberries if using. Pour about ⅓ cup into each clear cup. Refrigerate for 30 minutes until soft-set.
  2. Whip the Cream: Beat 1 cup chilled heavy cream with powdered sugar and vanilla extract until soft peaks form. Chill in fridge.
  3. Prepare the Lemon Jello Layer: Dissolve lemon Jello mix in 1 cup boiling water, stir until dissolved. Add ½ cup cold water and fresh lemon juice. Cool to room temperature without setting.
  4. Layer the Whipped Cream over Blueberry: Spoon or pipe about 2 tablespoons whipped cream over blueberry layer. Chill for 10 minutes.
  5. Add the Lemon Jello Layer: Pour about ⅓ cup cooled lemon Jello over whipped cream layer. Chill for 45 minutes until set.
  6. Finish with More Whipped Cream: Add a final dollop of whipped cream on top. Garnish with fresh blueberries and lemon zest if desired.
  7. Chill and Serve: Keep refrigerated until serving, best within 24 hours.

Notes

Chill each Jello layer until tacky to the touch before adding the next to prevent mixing. Cool lemon Jello to room temperature before pouring over whipped cream to avoid melting. Whip cream to soft peaks for best layering. Can substitute coconut cream for dairy-free version. Avoid freezing to maintain texture.
