  • 1 cup raspberries
  • Optional: small mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line your pizza pan with parchment paper so the cookie doesn’t stick.
  2. In a medium bowl, whisk together 2 ½ cups flour, 1 teaspoon baking powder, and ¼ teaspoon salt. Set aside.
  3. In a large bowl, beat ¾ cup softened butter with 1 cup granulated sugar until light and fluffy, about 3 minutes with an electric mixer.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Press the dough evenly into your prepared pan, forming a circle about ¼ to ½ inch thick. Chill in the fridge for 10-15 minutes.
  7. Bake for 18-22 minutes, or until edges are golden and center looks set but not browned. Let cool completely on a wire rack, about 30 minutes.
  8. While the cookie cools, beat together 8 oz softened cream cheese and ½ cup softened butter until smooth. Gradually add 2 cups powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon lemon zest. Beat until creamy and spreadable.
  9. Spread the cream cheese frosting evenly over the cooled cookie.
  10. Arrange sliced strawberries to create the red stripes, blueberries for the blue canton (top left corner), and raspberries for the white stripes.
  11. Garnish with mint leaves if desired. Slice into wedges and serve immediately or chill up to 24 hours (bring to room temperature before serving).

Notes

Let the cookie base cool completely before adding frosting to avoid melting. Avoid overmixing the dough to keep cookies tender. For smoother frosting, beat cream cheese and butter first before adding powdered sugar. If frosting is too stiff, add a teaspoon of milk. Chill dough before baking to prevent spreading.
