  • 46 bone-in, skin-on chicken thighs
  • 1 fresh pineapple, cut into thick slices or chunks
  • 1/2 cup (120 ml) low sodium soy sauce
  • 1/2 cup (120 ml) 100% pure pineapple juice
  • 2 tablespoons honey or brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon olive oil or avocado oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes (optional)
  • Green onions, sliced for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together soy sauce, pineapple juice, honey or brown sugar, minced garlic, grated ginger, and red pepper flakes if using.
  3. Pat dry the chicken thighs with paper towels. Add chicken to the marinade bowl, toss to coat evenly, and let sit for 15-20 minutes at room temperature or up to 2 hours in the fridge.
  4. Cut the fresh pineapple into thick slices or chunks. If using canned or frozen pineapple, drain well.
  5. Lightly oil a large rimmed baking sheet with olive or avocado oil. Arrange chicken thighs skin-side up, spacing evenly. Scatter pineapple pieces around the chicken. Pour any leftover marinade over the chicken and pineapple.
  6. Roast in the oven for 25-30 minutes. Halfway through (around 15 minutes), use tongs to flip the pineapple pieces for even caramelization. Do not flip the chicken.
  7. Check doneness with a meat thermometer; chicken should reach 165°F (74°C) internally. If skin isn’t crispy enough, broil for 2-3 minutes watching closely.
  8. Remove from oven and let chicken rest for 5 minutes.
  9. Garnish with sliced green onions and serve hot.

Notes

Patting chicken skin dry before marinating ensures crispier skin. Avoid overcrowding the pan to allow proper caramelization. Use a meat thermometer to avoid overcooking. Never reuse marinade that has touched raw chicken without cooking it first. For extra glaze, simmer reserved marinade briefly before drizzling.
