  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • A handful fresh cilantro, chopped (optional)
  • 810 corn or flour tortillas

Instructions

  1. In a mixing bowl, combine honey, fresh lime juice, minced garlic, chili powder, cumin, salt, black pepper, and olive oil. Whisk until well blended.
  2. Place chicken breasts or thighs in the bottom of the crockpot in a single layer if possible. Pour the marinade evenly over the chicken, turning pieces to coat thoroughly.
  3. Cover and cook on low for 4 to 5 hours, or until the chicken is fork-tender and shreds easily. Avoid opening the lid too often to maintain heat.
  4. Using two forks or tongs, shred the chicken directly in the crockpot, mixing it with the juices to keep it moist. If the sauce seems too thin, increase the heat to high for 15-20 minutes to reduce it slightly.
  5. Heat tortillas in a dry skillet over medium heat for 2-3 minutes or wrap in foil and warm in the oven at 350°F (175°C) for about 5 minutes.
  6. Spoon the shredded honey lime chicken onto warm tortillas. Garnish with chopped fresh cilantro if desired and add your favorite toppings like sliced avocado, diced onions, or sour cream.
