Instructions

  1. Preheat the oven to 425°F (220°C). Butter the ramekins generously and dust lightly with cocoa powder or flour to prevent sticking.
  2. Melt the dark chocolate and butter together in a double boiler or microwave until smooth and glossy. Let cool slightly until warm but not hot.
  3. In a medium bowl, whisk the eggs and granulated sugar until thick, pale, and slightly frothy, about 2-3 minutes.
  4. Stir in vanilla extract and espresso powder (if using) into the egg mixture.
  5. Slowly pour the melted chocolate and butter into the egg mixture, folding gently to combine without over-mixing.
