  • 2 tablespoons olive oil, plus extra for brushing
  • 2 cloves garlic, minced
  • 1 ½ cups (about 170 g) shredded mozzarella cheese
  • ¼ cup (25 g) grated parmesan cheese
  • 2025 thin slices pepperoni (regular or turkey)
  • 1 teaspoon Italian seasoning (basil, oregano, thyme blend)
  • ½ teaspoon crushed red pepper flakes (optional)
  • Pinch of salt
  • Handful fresh basil leaves, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a small bowl, mix 2 tablespoons olive oil with minced garlic and a pinch of salt. Let sit for 5 minutes to infuse flavors.
  3. Lightly flour your work surface and roll the pizza dough into a rough 12×10 inch (30×25 cm) rectangle.
  4. Brush the rolled dough generously with the garlic olive oil, covering edges well.
  5. Sprinkle shredded mozzarella evenly over the dough, then add grated parmesan cheese on top.
  6. Arrange pepperoni slices evenly over the cheese, slightly overlapping.
  7. Sprinkle Italian seasoning and crushed red pepper flakes (if using) over the top.
  8. Starting from the long side nearest you, roll the dough into a tight log.
  9. Using a sharp knife or pizza cutter, slice the roll into 1-inch (2.5 cm) thick pinwheels, about 12 pieces.
  10. Place the pinwheels cut side up on the prepared baking sheet, leaving space between each.
  11. Bake for 15–18 minutes until golden brown and cheese is bubbling.
  12. Let pinwheels cool for 5 minutes before serving to allow cheese to set.

Notes

Brush dough with garlic-infused olive oil to keep pinwheels crispy and flavorful. Use freshly shredded cheese for best melt and texture. Let dough come to room temperature before rolling to avoid tearing. Tent with foil if edges brown too fast. Can be air-fried at 375°F (190°C) for 10-12 minutes, turning halfway.
