  • ½ cup (100g) granulated sugar
  • 2 tablespoons honey
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 ounces (56g) dark chocolate (60% cacao or higher), chopped or chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Melt the butter gently in the microwave or on the stovetop until fully liquid but not hot. Let it cool slightly.
  3. In a medium bowl, combine the sugar, honey, melted butter, vanilla extract, and flour. Stir until just incorporated; a few lumps are okay.
  4. Fold in the sliced almonds gently, making sure each slice is coated with the buttery mixture.
  5. Drop teaspoon-sized dollops of the batter onto the prepared baking sheet, spacing them about 3 inches apart.
  6. Bake for 8 to 10 minutes, or until the cookies are golden brown around the edges and lacy in the center. Watch carefully in the last minutes to avoid burning.
  7. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them carefully to a wire rack to cool completely.
  8. While the cookies cool, melt the dark chocolate in a microwave-safe bowl in 20-second bursts, stirring in between, or use a double boiler.
  9. Drizzle the melted chocolate back and forth over the cooled cookies using a fork or spoon.
  10. Let the chocolate set completely at room temperature or refrigerate for 10 minutes to speed up setting.
