  • 1 ½ cups whole milk
  • 2 cups sharp cheddar cheese (shredded)
  • 1 small yellow onion (finely chopped)
  • 2 garlic cloves (minced)
  • Salt to taste (about 1 teaspoon coarse sea salt)
  • Black pepper to taste (about ½ teaspoon freshly cracked)
  • 1 teaspoon smoked paprika (optional)
  • 2 tablespoons butter or oil (for sautéing sausage and onion)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Thaw and dry hash browns thoroughly by pressing out moisture using a colander or clean kitchen towel.
  3. In a large skillet over medium heat, melt 2 tablespoons butter. Add breakfast sausage and cook, breaking it up, until browned and cooked through (7-8 minutes). Add chopped onion and minced garlic in the last 2 minutes and sauté until softened. Drain excess fat.
  4. In a large bowl, whisk together 6 large eggs and 1 ½ cups whole milk until combined. Stir in 2 cups shredded sharp cheddar cheese, 1 teaspoon smoked paprika, salt, and black pepper.
  5. Add cooked sausage and onion mixture to the egg custard. Fold in thawed, dried hash browns until evenly distributed.
  6. Spread mixture evenly into prepared baking dish and smooth the top.
  7. Bake uncovered for 45-50 minutes. About 10 minutes before done, increase oven temperature to 400°F (205°C) to create a crispy crust. The casserole is ready when edges are golden brown, center is set, and a knife inserted comes out clean.
  8. Let the casserole rest for 5-10 minutes before slicing and serving.
