  • 8 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions, about 9-11 minutes, until al dente. Reserve 1/2 cup of pasta water, then drain and set pasta aside.
  2. Pat dry shrimp and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add shrimp and sauté 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  3. Lower heat to medium and add minced garlic to the skillet. Sauté for about 30 seconds until fragrant, avoiding browning.
  4. Pour in white wine or chicken broth to deglaze the pan, scraping up browned bits. Simmer and reduce for 2-3 minutes.
  5. Stir in heavy cream and Parmesan cheese. Let sauce simmer gently for 3-4 minutes until slightly thickened. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  6. Add sun-dried tomatoes, fresh spinach, Italian seasoning, and crushed red pepper flakes if using. Stir until spinach wilts and mixture is heated through, about 2 minutes.
  7. Return shrimp to the skillet and stir to coat in sauce. Add drained linguine and toss gently to combine and warm for 1-2 minutes. Add more pasta water if needed to loosen sauce.
  8. Taste and adjust seasoning with salt and pepper. Garnish with fresh basil leaves if desired. Serve immediately.

Notes

Do not overcook shrimp to avoid rubbery texture. Reserve pasta water to adjust sauce consistency. Use fresh garlic for best flavor. Cook shrimp in batches if needed to avoid crowding the pan.
