Ingredients

Scale
  • 1 cup (240 ml) cold brew coffee concentrate
  • 1 cup (240 ml) milk or milk alternative (whole milk, oat milk, almond milk, etc.)
  • 2 tablespoons (30 ml) pumpkin puree (not pumpkin pie filling)
  • ½ cup (120 ml) heavy cream, chilled (or full-fat coconut cream for dairy-free)
  • 1 teaspoon (5 ml) vanilla extract
  • 12 tablespoons (1530 ml) maple syrup or honey, adjust to taste
  • 1 teaspoon (2 g) pumpkin pie spice (blend of cinnamon, nutmeg, cloves)
  • 1 tablespoon (12 g) granulated sugar (optional)
  • Ice cubes as needed

Instructions

  1. Prepare the Pumpkin Cream Topping: In a medium mixing bowl, combine ½ cup chilled heavy cream, 2 tablespoons pumpkin puree, 1 teaspoon vanilla extract, 1 tablespoon granulated sugar, 1-2 tablespoons maple syrup, and 1 teaspoon pumpkin pie spice.
  2. Using an electric mixer or whisk, beat the mixture on medium-high speed until soft peaks form, about 3-5 minutes. The cream should be light, fluffy, and spreadable.
  3. Prepare the Cold Brew Base: Fill a tall glass with ice cubes. Pour in 1 cup cold brew coffee concentrate and 1 cup milk or preferred milk alternative. Stir gently to combine. Adjust sweetness with a splash of maple syrup if desired.
  4. Assemble Your Drink: Spoon or gently pour the pumpkin cream topping over the cold brew mixture. The cream should float on top, creating a layered look. Avoid stirring immediately.
  5. Serve Immediately: Enjoy your creamy pumpkin cold brew right away. Add more ice cubes if you want it colder.

Notes

Chill mixing bowl and beaters before whipping cream for best results. Avoid overwhipping the cream to prevent graininess. Use high-quality cold brew concentrate for best flavor. Pumpkin cream topping can be made ahead and stored in the fridge up to 2 days. For dairy-free version, substitute heavy cream with coconut cream and milk with oat or almond milk.
