  • 4 cups beef broth (homemade or low sodium store-bought)
  • 1 medium onion, diced (yellow or white)
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salt to taste (start with 1 teaspoon)
  • Black pepper to taste (start with ½ teaspoon)
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onions and sauté until translucent, about 3-4 minutes.
  2. Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 6-7 minutes. Drain excess fat if necessary.
  3. Stir in minced garlic, smoked paprika, salt, and pepper. Cook for another minute until fragrant.
  4. Pour the beef mixture into the crockpot.
  5. Shred the cabbage finely (about 4 cups) while the beef is browning.
  6. Add shredded cabbage, diced tomatoes, tomato sauce, Worcestershire sauce, and beef broth to the crockpot. Stir to combine.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours until cabbage is tender and flavors meld.
  8. About 15 minutes before serving, taste and adjust salt and pepper if needed. Add a splash of broth or water if soup is too thick.
  9. Ladle soup into bowls and garnish with fresh parsley if desired. Serve warm with crusty bread or a side salad.

Brown the ground beef and onions first to deepen flavor. Shred cabbage finely for best texture. Adjust seasoning near the end to avoid over-salting. Soup flavors improve after a day or two.
