A quick and easy Salisbury steak recipe featuring juicy beef patties smothered in a rich, creamy mushroom gravy. Perfect for cozy dinners and busy weeknights.

  • 1 lb (450 g) ground beef, preferably 80/20 for juiciness
  • 1/4 cup (30 g) breadcrumbs (plain, unseasoned)
  • 1 large egg, room temperature
  • 1/4 cup (60 ml) milk (whole or 2%)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme (optional)
  • 8 oz (225 g) cremini or white mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups (480 ml) beef broth (low sodium preferred)
  • 1/2 cup (120 ml) sour cream
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme if using. Mix gently until just combined, about 5 minutes.
  2. Divide the mixture into 4 equal portions and shape each into oval patties about 1/2 inch thick. Place on a plate and set aside.
  3. Heat 1 tablespoon butter in a large skillet over medium heat. Add patties and cook for 4-5 minutes per side until browned and cooked through. Remove patties from pan and set aside.
  4. In the same pan, add remaining 1 tablespoon butter. Add sliced mushrooms and sauté for 5-7 minutes until browned.
  5. Sprinkle flour over mushrooms and stir well to coat. Cook for about 1 minute to remove raw flour taste.
  6. Slowly pour in beef broth while stirring constantly to avoid lumps. Bring to a gentle simmer and cook for 3-5 minutes until thickened.
  7. Lower heat and whisk in sour cream and Dijon mustard if using. Stir until smooth and creamy. Season with salt and pepper to taste.
  8. Return patties to the pan, spoon gravy over them, and warm together for 2 minutes before serving.

Notes

Do not overmix the meat to keep patties tender. Brown patties well for flavor. Adjust gravy thickness by adding broth or simmering longer. For gluten-free, substitute flour with almond or gluten-free flour. For dairy-free, use coconut milk and vegan butter instead of sour cream and butter.
