  • 1 cup (240ml) boiling water
  • 12 ounces (340g) dark chocolate (60-70% cacao), chopped finely
  • 1 ½ cups (360ml) heavy cream, warmed (or coconut cream for dairy-free)
  • 2 tablespoons unsalted butter, softened
  • A pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line bottoms with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Slowly pour wet ingredients into dry ingredients and mix gently until just combined.
  5. Carefully stir in boiling water; batter will be thin.
  6. Divide batter evenly among the three pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 15 minutes, then transfer to cooling racks to cool completely.
  8. Heat heavy cream until just simmering. Pour over chopped chocolate in a heatproof bowl and let sit for 2 minutes.
  9. Stir until smooth, then whisk in butter and a pinch of salt until glossy.
  10. Place one cake layer on a serving plate, spread a thick layer of ganache (about ¼ inch) on top. Repeat with second layer, then top with third layer.
