Instructions

  1. Puree the strawberries: Wash and hull 1 cup of fresh strawberries. Blend until smooth. Set aside ¼ cup for the batter and drain excess liquid if watery.
  2. Prepare the cream cheese mixture: Beat 8 oz softened cream cheese with 1 cup granulated sugar until light and fluffy (3-4 minutes).
  3. Add egg and vanilla: Beat in 1 large egg and 1 teaspoon vanilla extract until combined.
  4. Combine dry ingredients: Whisk together 2 ½ cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt.
  5. Mix dry ingredients into wet: Gradually add flour mixture to cream cheese batter in three parts, mixing on low speed. Fold in ¼ cup strawberry puree gently until just combined.
  6. Chill the dough: Cover and refrigerate for at least 30 minutes (minimum 15 minutes if short on time).
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Form the cookies: Scoop dough with 1.5-inch cookie scoop or spoon, roll each ball in powdered sugar until coated. Place 2 inches apart on baking sheet.
  9. Bake for 12-14 minutes until edges are set but centers remain soft with crinkle tops.
