  • 1 cup (230g) unsalted butter, softened
  • ¾ cup (90g) powdered sugar
  • 1 teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 2 tablespoons (16g) cornstarch
  • Pinch of salt
  • Sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper and set aside.
  2. In a large mixing bowl, cream together 1 cup (230g) of softened unsalted butter and ¾ cup (90g) of powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add 1 teaspoon of almond extract and ½ teaspoon of vanilla extract to the creamed butter and sugar mixture. Beat until well combined.
  4. In a separate medium-sized bowl, whisk together 2 cups (240g) of all-purpose flour, 2 tablespoons (16g) of cornstarch, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. The dough should hold its shape but remain soft to the touch.
  6. Roll the dough into 1-inch (2.5cm) balls and place them on the prepared cookie sheet, spacing them about 2 inches apart.
  7. Optional: Press a sliced almond gently into the center of each cookie for added texture and decoration.
  8. Bake for 10-12 minutes, or until the edges are just beginning to turn golden. Don’t overbake—these cookies are meant to stay soft!
  9. Remove the cookies from the oven and let them cool on the cookie sheet for 5 minutes before transferring them to a wire rack to cool completely.
