  • 4 boneless, skinless chicken breasts (about 6 ounces / 170 grams each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained slightly)
  • 1 cup chicken broth (240 ml), preferably low sodium
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried Italian herbs (or mix of dried basil, oregano, and thyme)
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat the 4 chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking, about 2 minutes.
  3. Add chicken breasts to the pan and cook for 5-6 minutes on one side without moving to develop a golden-brown crust. Flip and cook another 4-5 minutes until nearly cooked through (internal temperature should reach 155°F / 68°C). Remove chicken and set aside, tented with foil to keep warm.
  4. Reduce heat to medium. Add 2 tablespoons butter to the same pan. Once melted, add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
  5. Add chopped sun-dried tomatoes, 1 teaspoon dried Italian herbs, and 1/4 teaspoon red pepper flakes (if using). Stir and cook for 1-2 minutes to release flavors.
  6. Pour in 1 cup chicken broth, scraping the bottom of the pan with a wooden spoon to loosen browned bits. Let simmer for 3 minutes to reduce slightly.
  7. Lower heat to medium-low. Stir in 1 cup heavy cream followed by 1/2 cup freshly grated Parmesan cheese. Stir gently until cheese melts and sauce thickens, about 4-5 minutes. Sauce should coat the back of a spoon.
  8. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over the top. Cover loosely with a lid and simmer for 5 minutes to finish cooking and marry flavors.
  9. Remove lid and sprinkle chopped fresh basil over the chicken. Taste sauce and adjust seasoning with salt and pepper if needed.
  10. Serve chicken hot with plenty of sun-dried tomato cream sauce spooned over the top.

Notes

Use a meat thermometer to avoid overcooking chicken; aim for 160°F (71°C) final temperature after resting. If sauce thickens too much, stir in a splash of chicken broth or cream to loosen. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Chicken thighs can be used instead of breasts with slightly longer cooking time.
