  • 1/2 cup white wine or chicken broth
  • A handful of fresh parsley, chopped

Instructions

  1. Slice the bell peppers into thin strips about 1/4 inch thick. Slice the onion similarly and mince the garlic cloves. (About 10 minutes prep)
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage links whole and cook for 5-7 minutes, turning occasionally, until browned on all sides but not fully cooked through. Remove and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions and peppers, season lightly with salt and pepper, and cook for 7-8 minutes, stirring occasionally, until onions are translucent and peppers soften but retain some crunch.
  4. Add the minced garlic, dried oregano, and optional crushed red pepper flakes. Stir for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Pour in the white wine or chicken broth to deglaze the pan. Let it simmer for 2-3 minutes until slightly reduced.
  6. Slice the sausage links into bite-sized pieces and add them back to the skillet. Stir everything together, cover, reduce heat to low, and cook for an additional 5-7 minutes until sausage is fully cooked (internal temp 160°F) and peppers are tender.
  7. Sprinkle chopped fresh parsley over the top before serving. Taste and adjust salt and pepper if needed.
