  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced (optional)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 teaspoon sugar
  • Pinch of salt
  • 4 burger buns, toasted
  • Leafy lettuce or arugula
  • Tomato slices
  • Pickles (optional)
  • Cheese slices (cheddar or your favorite)
  • Condiments: ketchup, mustard, mayo (as preferred)

Instructions

  1. Prepare the caramelized onions: Heat 2 tablespoons butter in a large skillet over medium-low heat.
  2. Add thinly sliced onions, sprinkle with sugar and a pinch of salt, stirring to coat.
  3. Cook slowly, stirring every 5 minutes, allowing onions to soften and turn golden brown (25-30 minutes). Remove from heat and set aside.
  4. Mix the beef patty ingredients: Place ground beef in a mixing bowl.
  5. Add kosher salt, black pepper, minced garlic (if using), and Worcestershire sauce.
  6. Gently mix until just combined; do not overwork.
  7. Shape the patties: Divide mixture into 4 equal portions (about 4 oz or 115 g each).
  8. Form each into a round patty about ¾ inch (2 cm) thick, making a slight indentation in the center with your thumb.
  9. Cook the patties: Preheat grill or grill pan to medium-high heat.
  10. Place patties on grill and cook 4-5 minutes per side for medium doneness (internal temp 160°F / 71°C).
  11. If adding cheese, place a slice on each patty during the last minute of cooking and cover to melt.
  12. Remove patties and let rest for a few minutes.
  13. Toast the buns: Slice buns in half and toast lightly on grill or in toaster until golden brown.
  14. Assemble the burgers: Spread condiments on buns as desired.
  15. Layer lettuce, tomato slices, beef patty with melted cheese, caramelized onions, and pickles if desired.
  16. Top with the bun and serve immediately.

Notes

Do not overwork the meat to keep patties tender. Make a thumb indentation in patties to prevent puffing. Cook onions low and slow for best caramelization. Let patties rest after cooking to retain juices. Toast buns to prevent sogginess. Use a meat thermometer to ensure safe internal temperature of 160°F (71°C).
