  • Marinade:

  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • Sauce:
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar or honey
  • 1/2 cup beef broth or water
  • 1 teaspoon cornstarch
  • Aromatics:
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons vegetable or canola oil
  • Optional garnishes: sliced green onions, toasted sesame seeds

Instructions

  1. Slice the beef thinly, about 1/8-inch thick strips against the grain. This takes about 10 minutes.
  2. Marinate the beef by combining soy sauce, Shaoxing wine, cornstarch, and sesame oil in a bowl. Add beef strips, toss to coat, and let rest for 15 minutes.
  3. Wash and cut broccoli into bite-sized florets. Optionally blanch in boiling water for 1 minute, then plunge into ice water and drain.
  4. Mix the sauce by whisking together oyster sauce, soy sauce, brown sugar, beef broth, and cornstarch until smooth. Set aside.
  5. Heat 2 tablespoons oil in a wok or large skillet over medium-high heat. Add marinated beef in a single layer and cook 2-3 minutes without stirring to sear, then stir-fry until browned but tender. Remove beef and set aside.
  6. In the same wok, add more oil if needed. Stir-fry minced garlic and ginger until fragrant, about 30 seconds.
  7. Add broccoli and stir-fry for 2-3 minutes until bright green and crisp-tender.
  8. Return beef to the wok, pour in the sauce, and stir to combine. Cook 1-2 minutes until sauce thickens and coats beef and broccoli.
  9. Remove from heat, garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately over steamed rice or noodles.

Notes

If sauce is too thin, mix additional cornstarch with cold water and stir in during the last step. Avoid overcrowding the pan when cooking beef to prevent steaming. For gluten-free, substitute soy sauce with tamari and use gluten-free oyster sauce. Leftovers keep well refrigerated for up to 3 days; reheat gently in a skillet to maintain texture.
