  • 1 pound (450g) carrots, peeled and cut into 1/2-inch thick rounds or sticks
  • 4 tablespoons (60g) unsalted butter
  • 2 teaspoons fresh thyme leaves, stripped from stems
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup (60ml) water or low-sodium vegetable broth
  • Optional: fresh lemon juice, red pepper flakes

Instructions

  1. Peel and slice 1 pound (450g) of carrots into uniform 1/2-inch rounds or sticks. Set aside.
  2. Place 4 tablespoons (60g) of unsalted butter in a large skillet over medium heat. Stir frequently as the butter melts and begins to foam. Continue cooking until it turns a rich golden brown and smells nutty, about 4-5 minutes. Remove from heat immediately to prevent burning.
  3. Add the sliced carrots to the browned butter and toss to coat evenly. Pour in 1/4 cup (60ml) of water or low-sodium vegetable broth to help steam and soften the carrots. Stir to combine.
  4. Sprinkle 1 tablespoon brown sugar, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper over the carrots. Stir gently to mix. Reduce heat to medium-low, cover the skillet, and cook for about 10-12 minutes, stirring occasionally, until carrots are tender but still slightly firm.
  5. Remove the lid, add 2 teaspoons fresh thyme leaves, and stir well. Cook uncovered for another 2-3 minutes to thicken the glaze and infuse the thyme flavor.
  6. Taste and adjust seasoning if needed. Optionally, squeeze a little fresh lemon juice for brightness. Serve warm.

Notes

Watch the butter carefully to avoid burning; medium heat and constant stirring are key. Do not overcrowd the pan to allow proper caramelization. Add a splash of water if liquid evaporates too quickly. Fresh thyme is best added near the end to preserve flavor. For vegan option, use vegan butter or coconut oil and omit brown sugar or replace with maple syrup.
