  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tablespoons olive oil
  • 2 medium carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth for richer flavor)
  • Pinch of ground cinnamon
  • Pinch of nutmeg
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut milk

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel and cube the butternut squash, peel and chop the carrots, and mince the garlic. Place the squash and carrots on the prepared baking sheet.
  3. Drizzle the vegetables with olive oil, sprinkle with salt and pepper, and toss to coat. Spread them out evenly and roast for 25-30 minutes or until tender, turning halfway through.
  4. While the vegetables are roasting, heat a tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add garlic and sautΓ© for an additional minute.
