  • 2 tablespoons fresh culinary lavender buds (dried can be used)
  • 1 cup (240 ml) water
  • 1 ½ cups (360 ml) gin, preferably London dry gin
  • Club soda or sparkling water, about 1 cup (240 ml) per serving
  • Ice cubes, plenty
  • Optional garnish: lemon slices, lavender sprigs, or fresh mint leaves

Instructions

  1. Make the lavender syrup: In a small saucepan, combine 1 cup (240 ml) water, 1 cup (200 g) granulated sugar, and 2 tablespoons fresh lavender buds. Bring to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves completely, about 5 minutes. Remove from heat and let steep for 15 minutes.
  2. Strain the syrup: Using a fine mesh strainer, pour the syrup into a heatproof container, discarding the lavender buds. Let the syrup cool to room temperature.
  3. Juice the lemons: Juice about 4 large lemons to yield roughly 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp.
  4. Mix the cocktail base: In a large pitcher or cocktail shaker, combine 1 cup (240 ml) lavender syrup, 1 cup (240 ml) fresh lemon juice, and 1 ½ cups (360 ml) gin. Stir gently or shake lightly.
  5. Prepare glasses: Fill each glass with plenty of ice cubes.
  6. Pour and fizz: Fill glasses about two-thirds full with the lavender lemonade gin mixture. Top off with 1 cup (240 ml) club soda or sparkling water. Stir gently.
  7. Garnish and serve: Add a lemon wheel and a small sprig of lavender or fresh mint on top. Serve immediately.

Notes

Let the lavender syrup steep off the heat to avoid bitterness. Roll lemons before juicing for more juice. Stir gently to preserve gin botanicals and add club soda last to keep fizz lively. Use large ice cubes to prevent quick dilution. Syrup can be stored refrigerated for up to 2 weeks. For a lighter cocktail, swap half the gin for tonic water. Non-alcoholic version by omitting gin and adding extra club soda or sparkling lemonade.
