  • 1 cup strawberries, hulled and halved
  • 1 cup mandarin oranges or clementines, peeled and segmented
  • 1 cup pineapple, cut into 1-inch chunks (fresh or canned in juice, drained)
  • 1 cup green grapes, whole or halved
  • 2 kiwis, peeled and sliced into thick rounds or half-moons
  • 1 cup blueberries
  • 1 cup red grapes, whole or halved
  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tablespoon honey or maple syrup (or agave for vegan)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest (zest from about half a lemon)

Instructions

  1. Wash all fruit under cold water and pat dry with a clean kitchen towel.
  2. Hull strawberries and slice in half. Peel and segment mandarin oranges. Cut pineapple into 1-inch cubes. Peel and slice kiwi into thick rounds or half-moons. Halve grapes if large. Set out blueberries and red grapes whole.
  3. In a small mixing bowl, combine Greek yogurt, honey or maple syrup, vanilla extract, and lemon zest. Stir until smooth and creamy. Taste and adjust sweetness if desired.
  4. Thread one piece of each fruit onto a skewer in rainbow order: strawberry, orange segment, pineapple chunk, green grape or kiwi, blueberry, red grape. Repeat until skewer is filled, leaving 1 inch at the bottom for holding.
  5. Arrange skewers on a serving platter in a fan or circle pattern. Place yogurt dip in the center or on the side.
  6. Serve immediately, dipping each skewer into the creamy yogurt dip and enjoy.

Notes

Use firm, ripe fruit for best results. Swap in seasonal fruits like mango, watermelon, or blackberries. For dairy-free, use coconut yogurt and agave syrup. Chill skewers before serving for extra refreshment. Avoid overripe bananas as they brown and get mushy. Assemble skewers close to serving time for best color and texture.
