Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 3 minutes).
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.
  5. Divide the dough into three equal portions in separate bowls.
  6. For the vanilla layer: Leave one portion of dough as is and cover it with plastic wrap. Refrigerate for 15 minutes.
  7. For the strawberry layer: Mix the freeze-dried strawberry powder into the second portion of dough. Add a splash of milk if the dough is too dry and refrigerate.
  8. For the matcha layer: Mix the matcha powder into the third portion of dough. Again, add a splash of milk if needed and refrigerate.
  9. Once chilled, roll out each portion of dough into rectangles of equal size (about 1/4-inch thick).
  10. Layer the rectangles on top of each other—vanilla, strawberry, then matcha—and gently press them together.
  11. Wrap the layered dough tightly in plastic wrap and refrigerate for another 30 minutes to firm up.
  12. Slice the layered dough into 1/4-inch thick strips using a sharp knife, then cut each strip into small rectangles or squares.
  13. Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are slightly golden.
