This easy garlic butter lobster tails recipe delivers rich, buttery flavor and tender lobster meat, perfect for special occasions or a fancy yet simple dinner.

  • 4 lobster tails (about 68 oz / 170225 g each)
  • 6 tablespoons unsalted butter (85 g)
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice (30 ml)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Using kitchen shears, cut down the center of the top shell from the open end to the base of the tail, being careful not to cut the meat. Gently pry the shell apart with your fingers, then carefully lift the lobster meat out, resting it on top of the shell (piggybacking).
  3. Sprinkle salt, pepper, and paprika evenly over each tail.
  4. In a small saucepan over low heat, melt the butter. Add the minced garlic and cook gently for 1-2 minutes until fragrant but not browned. Stir in the lemon juice and half of the chopped parsley.
  5. Brush the lobster meat generously with the garlic butter mixture, making sure every nook and cranny is covered.
  6. Place the lobster tails on the prepared baking sheet, meat side up. Roast in the oven for about 12-15 minutes, or until the meat is opaque and firm to the touch (internal temperature around 135°F / 57°C).
  7. Halfway through roasting, baste the lobster tails again with the remaining garlic butter to keep them juicy and flavorful.
  8. Once cooked, remove the lobster tails from the oven and give them one last brush of garlic butter. Sprinkle with the remaining fresh parsley.
  9. Serve immediately with lemon wedges and optional flaky sea salt.

Notes

Keep a close eye in the last few minutes to avoid overcooking as lobster meat can turn rubbery. Use fresh garlic for best flavor and melt butter gently on low heat to avoid bitterness. Let lobster tails rest briefly after cooking to redistribute juices. For dairy-free, substitute butter with coconut oil or vegan butter and lemon juice with white wine vinegar.
