  • Tortilla chips (sturdy, thick-cut, e.g., Mission brand)
  • 1 lb (450g) ground beef (80/20 lean-to-fat ratio)
  • 2 cups (200g) shredded sharp cheddar and Monterey Jack cheese
  • 1 cup (240ml) black beans, drained and rinsed
  • Sliced jalapeños (fresh or pickled)
  • 1 cup (150g) diced fresh roma or vine tomatoes
  • ½ cup (75g) finely chopped red onion
  • ¼ cup (15g) fresh chopped cilantro
  • 1 ripe avocado, mashed
  • ½ cup (120ml) sour cream
  • Seasoning blend: 2 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp garlic powder, salt and pepper to taste
  • 1 tbsp freshly squeezed lime juice
  • Optional extras: sliced black olives, corn kernels, green onions

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or foil for easy cleanup.
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat, then stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for 5 more minutes until fragrant and fully cooked through. Set aside.
  3. While the beef cooks, dice tomatoes, chop onions, slice jalapeños, and chop cilantro. Mash the avocado with a squeeze of lime juice and a pinch of salt to make quick guacamole.
  4. Spread a single layer of tortilla chips on the baking sheet. Evenly scatter half of the cooked beef, black beans, tomatoes, onions, and jalapeños over the chips. Sprinkle half of the shredded cheese over everything. Repeat with remaining chips and toppings, finishing with the last of the cheese on top.
  5. Bake for 10-15 minutes until the cheese is melted and bubbly, and the edges of some chips start to brown. Keep a close eye to prevent burning.
  6. Remove from oven and immediately top with dollops of sour cream, guacamole, and fresh cilantro. Add optional extras like sliced olives or green onions if desired.
  7. Serve hot and enjoy the layers of flavor and textures—crispy, creamy, spicy, and fresh all at once.

Notes

Use sturdy, thick-cut tortilla chips to prevent sogginess. Drain excess fat from cooked beef to keep chips crisp. Layer toppings between chips rather than just on top to distribute flavors evenly. For extra crispy chips, toast them in the oven for 3-5 minutes before layering. Store chips and toppings separately if making ahead to maintain crispness. Avoid microwaving leftovers to prevent soggy chips; reheat in oven instead.
