  • 4 tablespoons unsalted butter
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Peel and dice the russet potatoes into small cubes. Set them aside.
  2. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Sprinkle the flour over the onion and garlic mixture, stirring constantly to form a roux. Cook for 2-3 minutes to remove the raw flour taste.
  4. Slowly pour in the chicken broth, whisking to combine and prevent lumps. Add the diced potatoes and bring the mixture to a boil. Reduce heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

  7. Pour in the milk and heavy cream, stirring to combine. Add salt and pepper to taste. Let the soup heat through for 5 minutes.
