A hearty, cheesy pasta dish packed with all the flavors of a classic bacon cheeseburger. Perfect for a comforting weeknight dinner or family gathering.

  • 12 oz pasta (penne, rotini, or macaroni)
  • 1 lb lean ground beef (80/20 blend)
  • 6 slices bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese (sharp cheddar preferred)
  • 1 cup whole milk
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp butter
  • Optional toppings: pickles, diced tomatoes, parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. Heat a large skillet over medium heat. Add the bacon and cook until crispy. Remove and set aside on a plate lined with paper towels. Crumble once cool.
  3. Drain most of the bacon grease from the skillet, leaving about 1 tablespoon. Add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  4. Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon. Season with salt and pepper.
  5. Stir in the ketchup and mustard. Let it simmer for 2-3 minutes to blend the flavors.
  6. Reduce the heat to low and stir in the milk, butter, and shredded cheddar cheese. Mix until smooth and creamy.
  7. Fold in the cooked pasta and crumbled bacon. Mix everything until the pasta is well-coated in the cheesy sauce.
  8. Taste and adjust the seasoning if needed. Add more cheese or a touch of milk if the sauce is too thick.
  9. Serve immediately, topped with pickles, diced tomatoes, or parsley if desired.
