  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces softened cream cheese
  • 1 cup shredded cheddar cheese
  • 2 jalapenos, diced finely
  • 68 slices thinly sliced bacon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and spray lightly with non-stick cooking spray.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix well until fully combined.
  3. In a separate bowl, prepare the filling by mixing softened cream cheese, shredded cheddar cheese, and diced jalapenos. Set aside.
  4. On the prepared baking sheet, shape half of the meat mixture into a loaf shape, making a slight indentation in the center.
  5. Spoon the jalapeno popper filling into the indentation, spreading it evenly but leaving a border around the edges.
  6. Top with the remaining meat mixture, sealing the edges to fully encase the filling.
  7. Wrap the meatloaf with slices of bacon, tucking the ends underneath to secure them.
  8. Bake the meatloaf for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). If needed, tent with foil halfway through to prevent the bacon from over-browning.
  9. Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute and keep the filling intact.
