  • 1 bone-in spiral ham (810 lbs), pre-sliced if possible
  • 1 cup honey
  • 1/2 cup brown sugar (light or dark)
  • 1/2 cup pineapple juice (from canned pineapple or fresh)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground cloves (optional)
  • 1 can (20 oz) pineapple rings in juice, drained (reserve juice for glaze)
  • Maraschino cherries (optional, for garnish)
  • Toothpicks (for securing pineapple and cherries)
  • Fresh cracked black pepper (optional, a pinch)
  • 1 teaspoon orange zest (optional)
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Remove ham from packaging and let sit at room temperature for 30 minutes. Pat dry and place cut side down on roasting rack. Preheat oven to 325Β°F.
  2. In a small saucepan, combine honey, brown sugar, pineapple juice, melted butter, Dijon mustard, and ground cloves. Stir and simmer over medium heat for 3-5 minutes until slightly thickened. Remove from heat.
  3. Score the surface of the ham in a diamond pattern, about 1/4 inch deep. Arrange pineapple rings over the ham, securing with toothpicks. Add maraschino cherries to the center of each ring if desired.
  4. Brush or spoon half the glaze over the ham, making sure to get into the scored crevices. Cover loosely with foil and bake for 1 hour, basting every 20 minutes with additional glaze.
  5. After 1 hour, remove foil and brush on remaining glaze. Increase oven temperature to 400Β°F and bake uncovered for 15-25 minutes, or until exterior is deeply caramelized and pineapple rings have golden edges.
  6. Remove from oven and let ham rest for at least 15 minutes before carving.
  7. Slice along spiral cuts and transfer to serving platter with pineapple rings on top. Spoon any pan juices over slices and serve.

Notes

For dairy-free, substitute olive oil for butter. Use fresh pineapple rings for a brighter flavor. Tent ham with foil for the first hour to keep it moist, and baste regularly for a lacquered glaze. Let ham rest before carving for juiciness. Leftovers are even more flavorful the next day. Can be made ahead and reheated with a splash of pineapple juice.
