  • 2 large chicken breasts, diced into bite-sized pieces
  • 1/2 cup barbecue sauce
  • 2 tablespoons honey
  • 2 cups cooked white or brown rice
  • 1 cup broccoli florets
  • 1/2 cup diced bell peppers
  • 1/2 cup shredded carrots
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions, sesame seeds, lime juice

Instructions

  1. Heat a nonstick skillet over medium heat and add 1 tablespoon of olive oil.
  2. Season the diced chicken with garlic powder, salt, and pepper, then sauté in the skillet for 6-8 minutes, or until fully cooked and slightly golden. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and toss in the broccoli, bell peppers, and carrots. Cook for 4-5 minutes, stirring occasionally, until the veggies are crisp-tender.
  4. Reduce the heat to low and return the chicken to the skillet. Pour the honey BBQ sauce mixture over the chicken and veggies, stirring to coat everything evenly. Let it simmer for 2-3 minutes to thicken slightly.
  5. Meanwhile, prepare your rice according to package instructions if not already cooked.
  6. To serve, divide the cooked rice among bowls and top with the honey BBQ chicken and vegetable mixture.
  7. Garnish with chopped green onions, sesame seeds, or a squeeze of lime juice, if desired.
