  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • Cooked white or brown rice
  • Fresh, ripe avocado, sliced or diced
  • Thinly sliced red onion
  • Freshly chopped cilantro
  • Olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix 1 cup of BBQ sauce with 2 tablespoons of honey. Set aside.
  2. Rub the chicken with olive oil, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and salt and pepper to taste.
  3. Heat a skillet or grill pan over medium-high heat. Cook the chicken for 4-5 minutes per side, or until golden and cooked through (internal temperature should reach 165Β°F/74Β°C).
  4. Reduce the heat to medium, and pour the honey BBQ sauce over the chicken. Let it simmer for 2-3 minutes, basting occasionally until the sauce caramelizes.
  5. Cook your choice of rice according to package instructions. Fluff with a fork once done.
  6. In a serving bowl, add a generous scoop of rice. Top with sliced honey BBQ chicken.
  7. Layer avocado slices, red onion, and chopped cilantro over the chicken. Optional: squeeze fresh lime juice for extra brightness.
  8. Serve immediately and enjoy the delicious combination of flavors and textures.
