  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup Greek yogurt (plain or vanilla)

  • ⅓ cup coconut oil, melted
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup heavy cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×9-inch baking pan or line it with parchment paper.
  2. In a medium-sized bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a large bowl, combine the pumpkin puree, Greek yogurt, melted coconut oil, maple syrup, eggs, and vanilla extract. Mix well until smooth and creamy.
  4. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula. Stop mixing as soon as you don’t see any dry flour streaks.
  5. Transfer the batter to the prepared baking pan, spreading it evenly with a spatula.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove the cake from the oven and let it cool completely on a wire rack.
  8. In a chilled bowl, beat the heavy cream, powdered sugar, cinnamon, and vanilla extract using an electric mixer on high speed until soft peaks form.
  9. Spread the whipped cinnamon frosting generously over the cooled cake using a spoon or offset spatula.
  10. Slice the cake into squares and serve immediately or store in the fridge until ready to enjoy.
