  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, diced small
  • 1/2 cup breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 large egg, beaten
  • Salt and pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat a large skillet over medium heat. Add a tablespoon of butter and sauté the onions and garlic until fragrant and translucent, about 3 minutes.
  3. Add the mushrooms to the skillet and cook for another 5 minutes, stirring occasionally, until softened.
  4. Add the ground beef to the skillet. Cook until browned and fully cooked, breaking it up with a wooden spoon. Season with salt, pepper, and fresh parsley.
  5. Remove the skillet from heat and let the mixture cool slightly before stirring in the breadcrumbs, Dijon mustard, and one beaten egg. Mix well to combine.
  6. Roll out the puff pastry on a lightly floured surface. If using two sheets, overlap slightly and press the seams together to create one large rectangle.
  7. Place the beef mixture in the center of the pastry, shaping it into a log. Fold the pastry over the filling, sealing the edges carefully. Trim off any excess pastry if needed.
  8. Brush the pastry with the remaining beaten egg to ensure a golden, flaky crust.
  9. Transfer the Wellington to the prepared baking sheet and bake for 25-30 minutes, or until the pastry is golden brown and crisp.
