  • 8 oz crumbled feta cheese
  • 4 oz softened cream cheese
  • 2 tbsp plain full-fat Greek yogurt (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 small clove garlic, minced
  • 1 small cucumber, diced
  • 1 small bunch radishes, thinly sliced
  • 1 cup snap peas, sliced
  • 1 small carrot, julienned (optional)
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • Salt and freshly ground black pepper to taste
  • Optional garnish: olive oil drizzle, whole herb leaves, crushed red pepper flakes

Instructions

  1. Rinse all fresh produce thoroughly under cold water. Dice cucumber, slice radishes thinly, slice snap peas into bite-sized strips, and julienne carrot if using. Chop dill, parsley, and chives finely. Set aside.
  2. In a food processor, combine crumbled feta, softened cream cheese, Greek yogurt (if using), olive oil, lemon juice, and minced garlic. Pulse until smooth and creamy, scraping down sides as needed. Add a teaspoon of water or more olive oil if too thick.
  3. Add salt and freshly ground black pepper to taste, starting with a small pinch.
  4. Transfer whipped feta mixture to a mixing bowl. Gently fold in chopped spring vegetables and herbs, preserving crunch and color.
  5. Chill dip in the refrigerator for 15-20 minutes if desired to allow flavors to meld, or serve immediately.
  6. Before serving, drizzle extra virgin olive oil on top, add whole herb leaves for garnish, or sprinkle crushed red pepper flakes if desired.

Notes

Use block feta for best whipping results. Soften cream cheese before blending. Pulse in short bursts to avoid grainy texture. Prepare veggies fresh before serving to keep crunch. Optional to chill dip before serving for better flavor melding. For dairy-free version, substitute cream cheese and yogurt with plant-based alternatives.
