  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint leaves
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper, optional

Instructions

  1. Cut seedless watermelon into 1-inch cubes and transfer to a large mixing bowl.
  2. Rinse, pat dry, and finely chop fresh mint leaves, crushing gently between fingers before chopping.
  3. In a small bowl, whisk together lime juice, extra virgin olive oil, sea salt, and black pepper if using. Adjust seasoning to taste.
  4. Pour dressing over watermelon cubes and toss gently to coat without breaking the fruit.
  5. Add chopped mint and crumbled feta cheese, then toss lightly to combine.
  6. Chill the salad in the refrigerator for 10-15 minutes before serving for best flavor, or serve immediately if preferred.

Notes

Use ripe, seedless watermelon with a creamy yellow spot for best sweetness. Avoid overmixing once feta is added to prevent mushiness. Fresh lime juice is recommended over bottled.
