  • 1/4 cup fresh pomegranate seeds (optional)
  • 1/4 cup freshly squeezed orange juice
  • 1 tbsp sparkling water or club soda
  • 1 tsp honey (optional for mocktail)
  • 2 tbsp local raw honey
  • 1 tbsp chopped toasted almonds or walnuts
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium saucepan, bring 2 cups (480 ml) of water or milk to a gentle boil. Add 1 cup (90 g) rolled oats and a pinch of salt. Reduce heat to medium-low and simmer, stirring occasionally, for 8-10 minutes until oats are creamy and soft. Remove from heat and stir in 1 tsp vanilla extract. Set aside.
  2. While oats cook, combine 1/2 cup sliced strawberries, 1/4 cup raspberries, 1/4 cup pomegranate seeds, and 1/4 cup freshly squeezed orange juice in a small mixing bowl. Add 1 tbsp sparkling water and 1 tsp honey, stirring gently to blend. Let sit for 5 minutes.
  3. Toast 1 tbsp chopped almonds or walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant and lightly golden. Remove from heat.
  4. Spoon warm oatmeal into serving bowls. Spoon the fresh Valentines mocktail mixture over the oats, allowing some juice to soak in. Drizzle 2 tbsp honey over the top.
  5. Sprinkle toasted nuts over the bowl and garnish with fresh mint leaves if desired. Serve immediately.

Notes

Use rolled oats for best creamy texture. For vegan version, swap honey with maple syrup or agave nectar and use plant-based milk. Toast nuts carefully to avoid burning. Add mocktail topping fresh to keep berries vibrant. If oats thicken too much, add splash of milk or water. Mocktail can be chilled for a colder bowl.
